FOOD 

Traditional Macedonian diet all about the simplicity and high-quality produce in season. Bread is the king, but meat is the crown of the table.

 

No fancy sauces or tricky soufflés or problematic combinations or strange exotic ingredients.

 

Salt, red pepper, mint, parsley, onion, and garlic. Walnuts, wild berries, small (not too good looking) but full of flavor and aroma apples. 

 

Local vine, rakija & vinegar are famous for their extraordinary taste and quality all around the world.

 

Meat comes from an animal who has lived it's life grazing on rich high altitude herbal pastures, roaming freely in its natural life cycle.

 

Dairy products are produced without chemicals, taste enhancers, using only traditional natural procedures. Local white cheeses are a synonym for this region. ”Galichko sirenje” is a brand.

BREAD

Bread is the

"Uncrowned King" of

Macedonian diet.

 

Back in times, there was so-called "Black bread" made of rue flour or "Sweet nautlija" made of chickpea flour.

 

Today, mixes of organic flour are used to make   Artisan bread with or, like in ancient times - without yeast.

RANCH

The ranch is located about 0.6 miles away from village Galichnik, 1500m above the sea level
surrounded by the untouched nature of National Park Mavrovo. Here is where our horses live during the summer. Restaurant & restrooms are available at the location and the accommodation in nearby villages.

MIYAK'S TRIBE

Miyaks are native tribe from the region of Macedonia. Some say they are descendants of the  King Samoil, others that their heritage goes far as the King Alexandar the Great.

Archeological artifacts mention their existence as far as the Roman times.

The Miyaks (Macedonian: Мијаци/Mijaci) are an ethnographic group of Macedonians who live
in the Lower Reka (Dolna Reka) region which is also known as Miyachia, along the Radika river,
in western Macedonia, numbering 30,000-60,000 people.

 

The Miyaks practice predominantly animal husbandry, also known for their contribution
in Macedonian literature, ecclesiastical architecture, woodworking, icon painting, and other rich traditions, as well as their characteristic Galichnik dialect of the Macedonian language.

 

Miyaks wedding rituals are represented in the annual "Galichnik wedding" festival.

2018 it is pronounced Europe's Most Traditional Wedding Festival by National Geographic.
